Ingredients
- 1 tablespoon all-purpose flour
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1/8 teaspoon cayenne pepper
- 3/4 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 4 (6-ounce) cod fillets skinless, about 1-inch-thick
- 5 tablespoons butter cut into 1-tablespoon pieces, divided
- 1 tablespoon olive oil
- 1 tablespoon garlic minced
- 1 1/2 tablespoons low-sodium chicken broth
- 1 1/2 tablespoons lemon juice freshly squeezed
- 1 tablespoon fresh parsley chopped, for garnish
- lemon wedges to taste, for garnish
Directions
- In a large shallow bowl, add the flour, the paprika, the onion powder, the thyme, the oregano, the cayenne pepper, the salt, and the black pepper and whisk to combine.
- Individually add the cod fillets to the flour mixture, turning each to coat them well.
- In a large, nonstick skillet over medium-high heat, add 1 tablespoon of the butter and the olive oil and heat until the butter has melted.
- Add the coated cod fillets to the heated butter-oil mixture and sear them until they reach an internal temperature of 145 degrees F, are golden-brown on each side, and are easily flaked with a fork, about 3-4 minutes per side.
- Place the cooked cod fillets on a large serving platter.
- In the same skillet over medium-low heat, melt the remaining butter.
- Add the garlic to the melted butter and sauté just until it is fragrant and lightly deepened in color but not browned, about 15 seconds.
- Reduce the heat to low. Carefully add the chicken broth and the lemon juice to the garlic and simmer, stirring constantly, until it is heated through, about 15-30 seconds.
- Immediately pour the garlic sauce over the cooked cod fillets.
- Garnish the cod fillets with the parsley and the lemon wedges and serve.
