Ingredients
- 1/2 pound shrimp large, raw, peeled, deveined, and tail removed
- 3 tablespoons plus 1 teaspoon cajun seasoning divided
- 5 tablespoons olive oil divided
- 4 ounces andouille sausage
- 1/2 yellow onion diced
- 1/2 red peppers cut into 1-inch chunks
- 4 ounces mushrooms
- 2 cloves garlic minced
- 1/2 cup tomatoes crushed
- 1/2 cup chicken broth
- 2/3 cup milk
- 3 tablespoons butter
- 1 tablespoon cornstarch
- 3 cups penne cooked
- 3 2/5 cup romano optional, for serving
- 2-3 green onions diced, optional, for serving
Directions
- Toss the shrimp in a bowl with the 3 tablespoons of the cajun seasoning.
- Heat 2 tablespoons of the olive oil over medium-high heat in a large skillet.
- Once heated, cook the shrimp until pink, about 2 minutes per side.
- Transfer the shrimp to a plate and set it aside.
- In the same skillet, cook the sausage until heated through, about 3 minutes.
- Transfer the sausage to a plate and set it aside.
- In the same skillet, heat the remaining 3 tablespoons of the oil.
- Add the onion, the red pepper, the mushrooms, and the remaining 1 teaspoon of the cajun seasoning.
- Stir and cook until the vegetables are tender, about 3-5 minutes.
- Add the garlic to the skillet and allow to cook, stirring constantly, until fragrant, about 30 seconds.
- Add in the tomatoes, the broth, the milk, and the butter.
- Bring the skillet mixture to a simmer.
- Add in the corn starch, whisking constantly to avoid clumps.
- Scrape the pan to break up and incorporate any brown bits on the bottom of the skillet.
- Simmer until the sauce thickens, about 5 minutes.
- Add the penne, the shrimp, and the sausage to the skillet.
- Toss together and allow to heat through.
- Garnish with the cheese and green onions, and serve immediately!
