Ingredients

  • 8 ounces chorizo ground or links with casings removed
  • 1 clove garlic minced
  • 1 cup mozzarella cheese shredded
  • 1 cup jarred queso quesadilla cheese
  • cilantro optional, to taste, chopped, for garnish
  • tortilla chips optional, to taste, for serving

Directions

  • Preheat the broiler.
  • In a medium-sized skillet over medium heat, add the chorizo and the garlic and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes.
  • Drain the fat from the skillet.
  • In a small, cast-iron skillet, add the mozzarella cheese and the queso quesadilla cheese.
  • Broil the cheese mixture until melted, about 2-3 minutes.
  • Transfer the cast-iron skillet from the oven and top the cheese mixture with the chorizo-garlic mixture.
  • Garnish with the cilantro and serve with the chips.
