Ingredients
- 1 tablespoon olive oil
- 1 large yellow onion halved and sliced into 1/2-inch-thick slices
- 1 teaspoon kosher salt divided
- 1 medium red bell pepper sliced into 1/2-inch-thick slices
- 1 clove garlic minced
- 1 pound ground chuck
- 1/2 teaspoon finely ground black pepper
- 8 ounces rotini pasta
- 2 (14.5-ounce) cans low-sodium chicken broth
- 1 1/2 cups provolone cheese shredded, divided
- 1 1/2 cups pepper jack cheese shredded, divided
Directions
- In a 10-inch, high-sided skillet over medium-high heat, add the oil and heat until it is shimmering.
- Add the onions and 1/2 teaspoon of the salt and cook, while stirring, until the onions begin to brown and soften, about 5 minutes.
- Add the bell peppers and the garlic to the onions and cook, while stirring, until the bell peppers begin to soften and the garlic is fragrant, about 2-3 minutes.
- Add the ground chuck, the black pepper, and the remaining salt to the onion mixture and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.
- Add the pasta to the beef mixture and stir to combine.
- Add the chicken broth to the pasta mixture and stir to combine.
- Cover the skillet and bring the pasta mixture to a boil.
- Uncover the skillet and cook, while stirring occasionally, until the pasta is cooked and most of the liquid is absorbed, about 20-25 minutes.
- Position an oven rack in the middle position.
- Preheat the oven to the broil setting on high.
- Add 1/2 of the provolone cheese and 1/2 of the pepper jack cheese to the pasta mixture and stir to combine.
- Sprinkle the remaining provolone and the remaining pepper jack cheese over the top of the pasta mixture.
- Broil the pasta mixture until the cheese melts and turns golden-brown, about 2-3 minutes.
- Serve.
