Ingredients
- 1 (10-ounce) can green enchilada sauce
- 3/4 cup salsa verde
- 1 pound ground beef
- 4 (10-inch) flour tortillas
- 1 1/2 cups cheddar cheese shredded, divided
- cilantro chopped, to taste, for garnish
Directions
- Preheat the oven to 375 degrees F.
- Grease an 11x7-inch baking dish.
- In a small bowl, add the enchilada sauce and the salsa verde and stir to combine.
- In a large skillet over medium heat, cook the beef, breaking it into crumbles, until no longer pink, about 8-10 minutes. Drain the beef of any fat.
- Add 1/2 cup of the sauce mixture to the beef and stir to combine.
- Spoon 2/3 cup of the beef mixture across the center of each tortilla and top each tortilla with 3 tablespoons of the cheese.
- Fold the bottom and the sides of each tortilla over the filling and roll them up.
- Place the rolled-up tortillas into the prepared baking dish and pour the remaining sauce mixture over the top of the rolled-up tortillas.
- Sprinkle the tortillas with the remaining cheese.
- Bake the burritos, uncovered, until the cheese is melted, about 10-15 minutes.
- Serve garnished with the cilantro.
