Ingredients

  • 1 1/2 cups white rice
  • 8 slices bacon cooked and chopped
  • 1/2 onion finely chopped
  • 3 chicken breasts boneless, skinless, and cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons ranch seasoning
  • 2 1/4 cups chicken broth
  • 1/4 cup heavy cream
  • 1 cup cheddar shredded
  • 1/2 cup mozzarella shredded
  • 2 teaspoons parsley optional, chopped, or sprigs of rosemary, optional, to taste

Directions

  • Preheat the oven to 350 degrees F.
  • Into a 9x13-inch baking dish, combine the rice, bacon, and onions.
  • Drizzle the chicken breasts with the olive oil and season all over with the ranch seasoning.
  • Place the chicken in the baking dish with the rice and stir until all ingredients are distributed evenly.
  • Pour in the chicken broth and heavy cream and stir to combine.
  • Top the casserole with the cheddar and mozzarella.
  • Cover the baking dish with foil and bake for 30 minutes.
  • Remove the foil and bake until the chicken is done and the rice is fully cooked, about 15-20 minutes.
  • Garnish with the parsley or rosemary and serve.
