Ingredients
- 2 teaspoons vegetable oil
- 1 pound ground chicken
- salt to taste
- pepper to taste
- 5 ounces shiitake mushrooms stems discarded and caps finely diced
- 1/2 cup onion finely diced
- 1 (8-ounce) can water chestnuts drained and finely diced
- 1 1/2 teaspoons garlic minced
- 1 teaspoon ginger minced
- 5 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 teaspoons sesame oil
- 1/3 cup green onions sliced
- 1 head butter lettuce leaves separated
- black sesame seeds to taste, for garnish
Directions
- In a large pan over medium-high heat, add the vegetable oil.
- Add the ground chicken, the salt, and the pepper to the heated oil and cook, while crumbling, until it is mostly cooked through, about 5-6 minutes.
- Add the mushrooms and the onions to the chicken and cook until the veggies are soft, about 4-5 minutes.
- Stir the water chestnuts, the garlic, and the ginger into the chicken mixture and cook, about 1 minute.
- In a small bowl, whisk the hoisin sauce, the soy sauce, the rice vinegar, and the sesame oil together.
- Pour the sauce over the chicken mixture and toss to evenly coat.
- Sprinkle the green onions over the chicken mixture.
- Evenly spoon the chicken mixture into each of the lettuce leaves.
- Serve the lettuce cups garnished with the sesame seeds.
