Ingredients
- 8 ounces gluten-free penne pasta or whole-wheat penne pasta
- 2 tablespoons extra-virgin olive oil
- 1 pound chicken breast or thighs boneless and skinless, trimmed and cut into bite-size pieces
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 4 cloves garlic minced
- 1/2 cup dry white wine
- juice and zest of 1 lemon
- 10 cups fresh spinach chopped
- 4 tablespoons parmesan cheese grated
Directions
- In a large pot of salted boiling water, cook the pasta to al dente, according to the package directions, and drain it.
- While the pasta is cooking, heat the oil in a large high-sided skillet over medium-high heat.
- Add the chicken pieces, the salt, and the pepper to the oil and cook, stirring occasionally, until they reach an internal temperature of 165 degrees F, about 5-7 minutes.
- Add the garlic to the chicken pieces and stir until fragrant, about 1 minute.
- Stir the wine, the lemon juice, and the lemon zest into the chicken mixture and bring to a simmer.
- Transfer the skillet from the heat and stir in the spinach and the cooked pasta.
- Cover the skillet and let the pasta mixture stand, just until the spinach has wilted.
- Top the pasta mixture with the parmesan cheese and serve.
