Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion finely chopped
  • 1 clove garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt plus more, to taste
  • 1 pound ground chicken
  • 1/4 cup kidney beans drained and rinsed
  • 1/4 cup black beans drained and rinsed
  • 1/4 cup chickpeas drained and rinsed
  • 1/4 cup pinto beans drained and rinsed
  • 1 cup tomato sauce
  • 1 (10-ounce) can tomatoes with green chilies
  • black pepper to taste
  • sour cream optional, to taste, for serving

Directions

  • In a medium pot over medium heat, add the oil.
  • Add the onions and the garlic to the hot oil and cook, while stirring, until they are softened, about 3-5 minutes.
  • Add the cumin, the paprika, the chili powder, and 1/2 teaspoon of the salt and cook until fragrant, about 1 minute.
  • Add the ground chicken to the pot and cook, while stirring and crumbling the meat, until the chicken is browned, about 5-7 minutes.
  • Add the kidney beans, the black beans, the chickpeas, the pinto beans, the tomato sauce, and the tomatoes with green chilies and their juices to the chicken mixture and stir to combine into a chili mixture.
  • Bring the chili mixture to a boil.
  • Reduce the heat to medium-low and simmer, uncovered and while stirring occasionally, until thickened, about 10 minutes.
  • Season the chili mixture with the extra salt and the black pepper.
  • Serve topped with the sour cream.
