Ingredients
For the chili:
- 2 teaspoons olive oil
- 1/2 cup onions chopped
- 1 small yellow or red bell pepper chopped
- 1 clove garlic minced
- 5 ounces ground turkey
- 1/2 teaspoon Italian seasoning plus more, to taste
- 1/4 teaspoon smoked paprika plus more, to taste
- 1/4 teaspoon kosher salt plus more, to taste
- 1/8 teaspoon coarsely ground black pepper plus more, to taste
- 1 (15-ounce) can diced tomatoes
- 1/4 cup canned black beans rinsed and drained
Optional, for topping:
- cheese to taste, of your choice, shredded
- sour cream to taste
- tortilla chips to taste
- cilantro to taste, chopped
Directions
- In a medium-sized skillet over medium heat, add the olive oil.
- Add the onions and the bell peppers to the hot oil and cook, while stirring, for 2 minutes.
- Add the garlic to the onion mixture and cook, while stirring, until the onions are translucent and the garlic is fragrant, about 1 minute.
- Add the ground turkey to the onion mixture and cook, while stirring and crumbling the meat, until the turkey is no longer pink, about 8 minutes.
- Add 1/2 teaspoon of the Italian seasoning, 1/4 teaspoon of the paprika, 1/4 teaspoon of the salt, and 1/8 teaspoon of the black pepper to the turkey mixture and stir to combine.
- Add the tomatoes and their juices and the black beans to the turkey mixture and stir to combine.
- Bring the chili mixture to a boil.
- Lower the heat and allow the chili mixture to simmer until it thickens, about 10 minutes.
- Taste the chili mixture for seasoning and add the extra Italian seasoning, the extra paprika, the extra salt, and the extra black pepper, as needed.
- Serve topped with your favorite toppings.
