Ingredients
- 2 tablespoons butter divided
- 6 loin pork chops boneless
- 2 small onions chopped
- 1 (10.75-ounce) can cream of mushroom soup
- 1 1/4 cups milk
- 4 cups potatoes very thinly sliced
Directions
- Preheat the oven to 350 degrees F.
- Butter or spray a 2-quart baking dish.
- Heat a large skillet over medium-high heat and melt 1 tablespoon of the butter in the pan.
- Add the pork chops to the melted butter and brown on both sides, about 3 minutes per side. Transfer the pork chops to a plate.
- Add the remaining butter to the skillet and melt.
- Add the onion to the butter and cook until it is soft, about 5 minutes.
- Add the cream of mushroom soup and the milk to the onion and stir until they are combined and no lumps remain.
- Place the potato slices in an even layer in the prepared baking dish.
- Place the pork chops on top of the potato layer.
- Evenly pour the soup mixture over the pork chops.
- Cover the baking dish and bake for 30 minutes.
- Remove the cover and cook until the pork is cooked through and has reached an internal temperature of at least 145 degrees F and the top is golden brown, about 30-40 minutes.
