Ingredients
- 1/4 cup plus 3 tablespoons lemon juice divided
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 2 teaspoons canola oil
- 1 clove garlic minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 3/4 pound chicken breasts boneless and skinless, cut into 1/2-inch strips
- 1 small onion sliced and separated into rings
- 1/2 medium green pepper julienned
- 1/2 medium sweet red pepper julienned
- 1/2 medium yellow pepper julienned
- 4 (6-inch) flour tortillas warmed
- cheddar cheese optional, to taste, shredded
Directions
- Preheat the broiler.
- Grease a 15x10x1-inch baking pan.
- In a small bowl, combine 3 tablespoons of the lemon juice, the soy sauce, the Worcestershire sauce, the canola oil, the garlic, the cumin, and the oregano.
- Place the chicken, the onion, the green pepper, the red pepper, and the yellow pepper on the prepared baking dish in a single layer.
- Drizzle the chicken mixture with the remaining lemon juice and broil 4-6 inches from the heat source, about 4 minutes.
- Turn the chicken mixture and drizzle with the sauce mixture.
- Broil the chicken mixture until the meat reaches an internal temperature of 165 degrees F, about 4 minutes.
- Serve the chicken mixture on the warm tortillas, sprinkled with the cheese.
