Ingredients
- 16 ounces whole-grain wide noodles
- 5 large eggs whisked
- 2 teaspoons cinnamon plus more to taste
- 1/2 cup sugar
- kosher salt to taste
- 3 cups unsweetened applesauce
- 2 tablespoons vegetable oil
Directions
- Preheat the oven to 350 degrees F.
- Spray a 9x13-inch baking dish with cooking spray.
- Bring a large pot of water to a boil.
- Cook the noodles for 5 minutes.
- Drain and rinse the noodles with cold water to stop the cooking process.
- In a bowl, whisk the eggs, the cinnamon, the sugar, the salt, and the applesauce together.
- Coat the same pot used for the noodles with the oil.
- Add the noodles and the applesauce mixture to the oil and stir to combine.
- Transfer the noodles to the prepared baking dish.
- Sprinkle the top of the kugel with the remaining cinnamon.
- Bake until the kugel is completely set and the noodles on top are slightly crispy and browned, about 40-45 minutes.
