Ingredients
For the crumb topping:
- 1/2 cup flour plain or whole wheat
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup butter
For the bread:
- 1 3/4 cups whole wheat flour
- 1/4 cup cornstarch or whole wheat flour
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup bananas mashed
- 3/4 cup sugar or to taste
- 1/3 cup oil
- 1/2 cup Greek yogurt
Directions
- Preheat the oven to 360 degrees F.
- Grease and line a 9x5-inch loaf pan.
- Place 1/2 cup of flour with the brown sugar and 1 teaspoon of cinnamon in a medium bowl.
- Mix the butter into the mixture, rubbing it with your fingers to form crumbs.
- Refrigerate the crumb mixture until ready to use.
- In a large bowl, combine 1 3/4 cups of whole wheat flour, 1/4 cup of cornstarch, 2 teaspoons of cinnamon, the baking powder, and the salt, stirring until well combined.
- Stir the eggs, banana, sugar, oil, and Greek yogurt together in a separate large measuring jug until well combined.
- Pour the wet ingredient mixture into the dry ingredient mixture and fold together until the flour is just moistened; a few lumps remaining are fine.
- Place the batter in the prepared loaf tin.
- Sprinkle the top with the crumb mixture.
- Bake until a toothpick inserted comes out clean, about 50-60 minutes.
- Cool the bread in the pan for 10 minutes.
- Transfer the bread to a wire rack to cool completely.
- Serve.
