Ingredients

  • 2/3 cup all-purpose flour
  • 3/4 teaspoon kosher salt
  • 3 ounces unsweetened chocolate chopped
  • 1/2 cup unsalted butter
  • 1 1/4 cups white sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Directions

  • Preheat the oven to 350 degrees F.
  • Prepare an 8-inch square baking dish or pan by buttering it and then lining it with parchment paper.
  • In a bowl, mix together the flour and salt. Set the flour mixture aside.
  • Prepare a double-boiler by placing a heatproof bowl over a saucepan with 1 inch of very gently simmering water.
  • Add the chocolate and butter to the heatproof bowl.
  • When the butter and most of the chocolate are melted, turn off the heat and continue stirring until smooth. Set it aside.
  • In a mixing bowl, combine the sugar and eggs and beat with a hand mixer until very airy, thick, and creamy, about 5 minutes.
  • Add the vanilla extract to the egg and sugar mixture and, while the mixer is running at medium-high speed, slowly drizzle in the melted chocolate mixture. Pouring in the chocolate slowly and constantly whisking helps prevent the eggs from scrambling.
  • Turn the mixer down to the lowest speed and add in the flour mixture. Continue mixing until the flour is fully incorporated.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • Bake on the center rack until a toothpick inserted near the center comes out clean, about 30 minutes.
  • Allow the brownies to cool in the pan on a wire rack to room temperature for about 20-30 minutes.
  • Remove from the pan, slice into serving-size pieces, and serve!
