Ingredients
- 1 1/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter
- 1/2 cup brown sugar packed
- 1/2 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/3 cup coconut flakes
Directions
- Preheat the oven to 350 degrees F.
- Whisk together the flour, baking soda, and salt in a mixing bowl.
- In a separate mixing bowl or the bowl of a stand mixer, cream together the butter, brown sugar, and white sugar.
- Add the egg and vanilla to the butter and sugar mixture and continue beating until light and fluffy.
- Add the flour mixture slowly to the butter mixture until just incorporated, making sure not to overmix.
- Fold in the coconut.
- Drop the cookie dough for a spoon 3 inches apart on an ungreased baking sheet.
- Bake until lightly golden, about 8-12 minutes.
- Allow the cookies to cool on a wire rack before serving. .
