Ingredients
- 6 slices of bacon thick-cut
- 1 large onion diced
- 1 clove of garlic minced
- 2 (15-ounce) cans of cannellini beans 1 can drained and rinsed, 1 can undrained
- 2 (15-ounce) cans of red kidney beans drained and rinsed
- 1/4 cup dark brown sugar packed
- 1/3 cup molasses
- 3/4 cup cola
- 1 (14.5-ounce) can of tomatoes chopped and drained
- 2 teaspoons dry mustard
Directions
- Preheat the oven to 375 degrees F.
- In a large ovenproof skillet, over medium-high heat, cook the bacon until crisp and golden, about 5-7 minutes.
- Drain the bacon onto a paper-towel-lined plate and allow it to cool off enough to handle.
- Crumble the cooled bacon and set it aside.
- Pour out all but 1 tablespoon of the bacon fat from the skillet.
- Add the onion and garlic to the skillet and cook, stirring, until the onion is golden, about 5 minutes.
- Add the cannellini beans, kidney beans, brown sugar, molasses, cola, tomatoes, dry mustard, and crumbled bacon into the onion mixture. Stir to combine.
- Cover the skillet, transfer to the oven, and bake until the mixture is bubbly and the juices have thickened slightly, for about 1 hour.
- Serve hot.
