Ingredients
- 1 pound ground beef
- 1/2 cup onion chopped
- 2 teaspoons smoked paprika
- 2 teaspoons garlic powder
- 4 cups potatoes diced
- 5 cups chicken broth
- 4 cups cheddar cheese shredded
- 1 tablespoon cornstarch
- 1 1/2 tablespoons dried parsley plus more, to taste, for garnish
Directions
- In a medium-sized skillet over medium-high heat, add the ground beef, the onion, the paprika, and the garlic powder and stir to combine.
- Cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Set the beef mixture aside.
- In a large pot over medium-high heat, add the potatoes and the chicken broth and cook until bubbling, about 10 minutes.
- Add the cheddar cheese and cook, while stirring constantly, until the cheese is completely melted.
- Add the ground beef mixture, the cornstarch, and 1 1/2 tablespoons of the parsley and cook, while stirring, until the beef is evenly distributed in the soup.
- Continue stirring the soup until it begins to bubble and the potatoes are tender, about 2-3 minutes.
- Serve garnished with the extra parsley.
