Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breasts boneless and skinless, cubed
  • 4 medium potatoes peeled and cut into 1/4-inch cubes
  • 1 medium sweet red pepper chopped
  • 2 cloves garlic minced
  • 1 (26-ounce) jar spaghetti sauce meatless
  • 1 3/4 cups frozen cut green beans
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • black pepper to taste

Directions

  • In a Dutch oven over medium-high heat, heat the olive oil.
  • Add the chicken, the potatoes, the sweet red pepper, and the garlic to the olive oil and cook until the chicken reaches an internal temperature of 165 degrees F and the vegetables are tender.
  • Add the spaghetti sauce, the green beans, the basil, the salt, the red pepper flakes, and the black pepper to the chicken mixture and stir to combine.
  • Cook the stew, stirring occasionally, until heated through.
  • Serve.
