Ingredients

For the almonds:

2 teaspoons butter
3/4 cup almonds sliced
1 tablespoon sugar

For the dressing:

1/4 cup canola oil
3 tablespoons rice vinegar
2 tablespoons brown sugar

For the salad:

8 cups leaf lettuce torn
1 medium sweet red pepper chopped
1 medium sweet yellow pepper chopped
2 green onions chopped
1 (3-ounce) can of crispy rice noodles
1/3 cup sunflower kernels

Directions

In a small heavy skillet, melt the butter.
Add the almonds and cook over medium heat until toasted, about 4 minutes.
Sprinkle the almonds with sugar.
Cook the almonds, stirring, until the sugar is melted, for about 2-3 minutes.
Spread the almonds on foil to cool.
In a small bowl, whisk the oil, vinegar, and brown sugar.
Chill the dressing until ready to serve.
In a large bowl combine the lettuce, red pepper, yellow pepper, and green onions.
Add the dressing to the salad, tossing to coat.
Sprinkle the salad with rice noodles, sunflower kernels, and almonds.
Serve.
