Ingredients
- 3 pounds potatoes cut to 1/4-inch-thick slices
- 1 onion thinly sliced
- mushrooms to taste, sliced
- 3 tablespoons butter
- kosher salt to taste
- black pepper to taste
- 1 pound bacon cooked and chopped
- mozzarella cheese to taste, shredded
Directions
- Preheat the grill to medium heat.
- Coat equal equal-sized pieces of aluminum foil with nonstick cooking spray.
- Evenly add the potato slices, the onions, and the mushrooms to each of the prepared foil pieces.
- Evenly top each of the potato mixtures with the butter, the salt, and the pepper.
- Evenly sprinkle each of the potato mixtures with the bacon and the cheese.
- Fold each of the foil packets closed and grill until the vegetables are soft, about 30 minutes.
- Serve.
