Ingredients

  • 4 ounces cream cheese softened
  • 1/4 cup butter or margarine
  • 1/2 cup confectioners' sugar
  • 1 container Cool Whip topping
  • 1 box instant white chocolate or vanilla pudding
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • canned pineapple chunks to taste, drained
  • fresh strawberries to taste, hulled and halved, plus more, to taste, whole
  • fresh blackberries to taste, halved

Directions

  • In a large bowl, add the cream cheese and the butter and beat with an electric hand mixer until it is smooth.
  • Add the confectioners' sugar to the cream cheese mixture and beat to combine.
  • Fold the Cool Whip into the cream cheese mixture.
  • In a medium bowl, add the pudding mix, the milk, and the vanilla extract and use an electric hand mixer to beat to combine.
  • Fold the pudding mixture into the Cool Whip mixture.
  • In four dessert cups, evenly divide and layer in the pineapple chunks, 1/3 of the Cool Whip mixture, the strawberry halves, 1/2 of the remaining Cool Whip mixture, the blackberries, and the remaining Cool Whip mixture, in that order.
  • Top the parfaits with the extra whole strawberries.
  • Place the parfaits in the refrigerator to chill until ready to serve.
  • Serve.
