Ingredients
- 1/2 cup old-fashioned oats
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1 cup unsalted butter melted
- 3/4 cup brown sugar packed
- 3/4 cup granulated sugar
- 1 tablespoon vanilla extract
- 1/2 teaspoon lemon juice
- 2 large eggs
- 3 cups chocolate chips
- 1 1/2 cups walnuts chopped
Directions
- Line a cookie sheet with parchment paper or a silicone baking mat.
- Place the oats in a small food processor or blender and grind until they are powdery.
- Place the ground oats in a medium-sized bowl.
- Whisk the flour, the baking soda, the salt, and the cinnamon into the ground oats.
- In another bowl, stir the melted butter, the brown sugar, and the granulated sugar until smooth.
- Stir the vanilla, the lemon juice, and the eggs into the butter mixture until smooth.
- Stir the butter mixture into the flour mixture until only slightly lumpy.
- Stir the chocolate chips and the walnuts into the batter.
- Scoop 1/4-cup-sized dollops of the dough, form them into balls, and place them on the prepared baking sheet.
- Cover the cookies well with plastic wrap and chill for at least 4 hours and up to overnight.
- Preheat the oven to 350 degrees F.
- Place the cookies on a cookie sheet lined with parchment paper or silicone baking mats, giving them enough space to expand during baking.
- Slightly press each dough ball with your palm.
- Bake until the cookies are just slightly underdone, about 13-17 minutes.
- Serve.
