Ingredients
- 3 tablespoons butter
- 1 1/2 pounds red potatoes chopped
- 1/4 cup fresh parsley minced
- 2 teaspoons garlic minced
- 1 1/2 teaspoons garlic salt with parsley flakes
- 1/8 teaspoon black pepper
- 8 large eggs
- 3/4 cup extra-sharp cheddar cheese shredded
Directions
- Preheat the oven to 400 degrees F.
- In a 10-inch ovenproof skillet over medium heat, melt the butter.
- Add the potatoes to the melted butter and cook, while stirring, until tender, about 6-8 minutes.
- Add the parsley, the garlic, the garlic salt, and the black pepper to the potatoes and stir to combine.
- Using the back of a spoon, make four wells in the seasoned potatoes.
- Add 2 of the eggs to each of the wells in the potato mixture. Try to keep the yolks intact.
- Bake until the eggs are just set, about 10-12 minutes.
- Sprinkle the egg mixture with the cheese and bake until melted, about 1-2 minutes.
- Serve immediately.
