Ingredients
- 1 pound lean ground beef
- 1 medium onion minced
- 3 cloves garlic minced
- 1 (14-ounce) can diced tomatoes
- 1 cup sour cream
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups frozen corn thawed
- 2 cups cheddar cheese grated
- 26 ounces tater tots
Directions
- Preheat the oven to 425 degrees F.
- Cook the lean ground beef in a large frying pan over medium-high heat until only a little pink remains, about 5 minutes.
- Add the onion and the garlic and continue to cook until the onion is softened, about 5 minutes.
- Mix the tomatoes and the sour cream into the beef.
- Season the beef mixture with the salt and the pepper.
- Pour the creamy beef mixture into a 9x11-inch casserole dish.
- Top the beef layer with the corn and the cheese.
- Arrange the tater tots in a single layer on the top of the casserole.
- Bake until the tater tots are crispy and brown, about 25-30 minutes.
- Serve.
