Ingredients
- 4 cups mixed berries fresh or frozen, thawed if frozen
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 (15.25-ounce) box vanilla cake mix
- 8 tablespoons unsalted butter cut into cubes
- vanilla ice cream optional, to taste, for serving
Directions
- Preheat the oven to 350 degrees F.
- Coat a 9-inch square or oval baking dish with nonstick cooking spray.
- In a medium bowl, add the berries, the sugar, the cornstarch, the lemon juice, and the vanilla and stir to combine.
- Add the berry mixture to the prepared baking dish, spreading it out evenly.
- Evenly sprinkle the cake mix over the top of the berry mixture.
- Scatter the butter cubes evenly over the cake mix layer, but do not stir.
- Cover the baking dish with aluminum foil.
- Bake until the top is golden and the berry mixture is bubbling, about 1 hour.
- Remove the foil and bake for another 5 minutes.
- Allow the cake to cool for 5 minutes.
- Serve with the ice cream.
