Ingredients

  • 2 tablespoons olive oil
  • 1/2 pound ground beef
  • 1 tablespoon garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 (12-ounce) bag tortilla chips
  • 1 (15-ounce) can black beans rinsed and drained
  • 1/2 cup frozen corn kernels
  • 1/2 cup black olives sliced
  • 1 cup white cheddar cheese shredded
  • 1 cup yellow cheddar cheese shredded
  • 1 cup tomatoes diced, for serving
  • 1 tablespoon green onions finely chopped, for serving

Directions

  • Preheat the oven to 400 degrees F.
  • In a skillet over medium-high heat, add the oil and heat until it sizzles and simmers.
  • Add the beef and the garlic to the heated oil and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.
  • Stir the salt, the pepper, the paprika, and the cayenne pepper into the beef mixture until it is well-combined.
  • Evenly arrange the tortilla chips on a half sheet pan.
  • Evenly sprinkle the beef mixture over the tortilla chips, then evenly top with the black beans, the corn, the black olives, the white cheddar cheese, and the yellow cheddar cheese.
  • Bake the nachos until the cheese is melted, golden-brown, and bubbly, about 12-15 minutes.
  • Evenly sprinkle the nachos with the tomatoes and the green onions.
  • Serve.
