Ingredients
For the apple cake:
- butter to taste, softened, for greasing the pan
- 1 1/2 cups brown sugar
- 1/3 cup canola or olive oil
- 1 egg
- 1 cup buttermilk
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 2 1/2 cups flour
- salt to taste
- 2 1/2 cups Honeycrisp apples optionally peeled and chopped
For the cinnamon-sugar topping:
- 1/2 cup white sugar
- 1 teaspoon cinnamon
- 1 tablespoon butter melted
- salt to taste
- powdered sugar optional, to taste, for topping
Directions
- Preheat the oven to 325 degrees F.
- Using the extra softened butter, grease a 9x13-inch baking pan.
- In a large mixing bowl, add the brown sugar, the oil, the egg, the buttermilk, and the vanilla and mix until combined.
- Add the baking soda, the flour, and the salt to the brown sugar mixture and mix until just combined into a batter.
- Add the apples to the batter and fold to combine.
- Pour the batter into the prepared baking pan, spreading it out evenly.
- In a small bowl, add the white sugar, the cinnamon, 1 tablespoon of the remaining melted butter, and the salt and mix to combine.
- Sprinkle the topping evenly over the batter in the baking pan.
- Bake the cake until a tester inserted into the center comes out clean, about 45 minutes.
- Serve dusted with the powdered sugar.
