Ingredients

3 pounds yellow squash chopped
5 tablespoons butter or margarine divided
1 small onion chopped
1 cup sharp cheddar cheese shredded
2 large eggs lightly beaten
1/4 cup mayonnaise
2 teaspoons sugar
1 teaspoon salt
20 round buttery crackers crushed

Directions

Preheat the oven to 350 degrees F.
Grease an 11x7-inch baking dish.
Bring the water to a boil and cook until the squash is just tender, about 10 minutes.
Drain the water from the squash well and gently press them between paper towels.
In a large skillet over medium-high heat, melt 4 tablespoons of the butter.
Add the onion to the butter and sauté until it is tender, about 5 minutes.
Transfer the onion from the heat and stir in the squash, the cheese, the eggs, the mayonnaise, the sugar, and the salt.
Pour the squash mixture into the prepared baking dish.
In a microwave safe bowl, melt the remaining butter.
Stir the melted butter with the crackers.
Sprinkle the cracker mixture over the top of the casserole.
Bake until the casserole is warmed through, about 30-35 minutes.
Serve.
