Ingredients
- 1 pound ground beef can substitute with ground pork, ground chicken, or ground turkey
- 1 tablespoon garlic paste
- 1 teaspoon ginger paste
- 1 (16-ounce) bag coleslaw mix
- 1 baby bok choy chopped
- 1/2 cup matchstick carrots
- 1/3 cup reduced-sodium soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 green onions chopped
- salt to taste
- pepper to taste
- sriracha optional, to taste, for serving
- sesame seeds optional, to taste, for serving
Directions
- Add the ground beef to a large, deep skillet and brown over medium heat, while crumbling, until no pink remains, about 5-7 minutes.
- Drain any excess grease from the skillet.
- Lower the heat to medium-low.
- Add the garlic paste and the ginger paste and cook while stirring, until fragrant, about 1 minute.
- Add the coleslaw mix, the bok choy, the carrots, the soy sauce, the hoisin sauce, the sesame oil, and the rice vinegar and stir to combine.
- Cook over medium-low heat until the coleslaw mix is soft, about 10-15 minutes.
- Top with the green onions and season with the salt and the pepper.
- Transfer the mixture to four serving bowls.
- Drizzle with the sriracha and sprinkle with the sesame seeds.
- Serve.
