Ingredients

  • 2 (12.5-ounce) cans of white premium chunk chicken breast
  • 1 egg
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt plus more to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon dried thyme
  • 1 1/4 cup plain dried bread crumbs divided
  • vegetable oil for pan-frying

Directions

  • Drain the chicken well.
  • Roughly chop the chicken. A consistent size will ensure consistent texture in the final product.
  • Add the chopped chicken, egg, dijon mustard, salt, garlic powder, onion powder, black pepper, and dried thyme.
  • Stir in 1/4 cup of bread crumbs.
  • Pour the remaining bread crumbs into a shallow bowl.
  • Portion the chicken mixture into six fritters.
  • Coat the fritters on both sides with the bread crumbs.
  • Heat about 1/4 inch of the vegetable oil in a large skillet over medium to medium-high heat.
  • When the oil is hot, pan-fry the fritter on each side until golden brown and crispy, about 4-5 minutes per side.
  • Serve.
