Ingredients

3/4 cup self-rising flour
1 cup self-rising corn meal
1 large egg lightly beaten
1 small onion finely minced
1 tablespoon sugar
garlic powder to taste
onion powder to taste
Old Bay seasoning to taste
3/4 cup buttermilk plus more, to taste
canola oil to taste

Directions

In a large mixing bowl, add the flour and the cornmeal and mix to combine.
Add the egg, the onion, the sugar, the garlic powder, the onion powder, and the Old Bay seasoning to the flour mixture and stir to combine.
Add 3/4 cup of the buttermilk to the flour mixture and stir with a fork until just blended. The mixture should be fairly stiff; if the mixture seems too dry, add the extra buttermilk, a little at a time, until the desired consistency is reached.
In a deep fryer, heat the oil to 375 degrees F.
Drop the dough by the teaspoon into the hot oil and fry until the hush puppies rise to the top and are golden-brown, about 2-3 minutes
Transfer the cooked hush puppies from the fryer to paper towels to drain.
Repeat the frying process until all of the batter is used.
Serve hot.
