Ingredients

  • 1 tablespoon salted butter melted
  • 2 cups cranberries
  • 2 tablespoons brown sugar plus more, to taste
  • 1/4 teaspoon ground cinnamon
  • 1 (17.3-ounce 2-count) box frozen puff pastry, thawed
  • 1/3 cup fig preserves
  • 2 (8-ounce) wheels brie cheese rind- on and each cut into 12 slices
  • 1 egg beaten
  • coarse sugar optional, to taste
  • fresh thyme optional, to taste, for serving

Directions

  • Preheat the oven to 425 degrees F.
  • Line a baking sheet with parchment paper.
  • In a medium bowl, combine the butter, the cranberries, the brown sugar, and the cinnamon.
  • Cut each of the puff pastry sheets into 6 equal rectangles.
  • Spread about 1 tablespoon of the fig preserves on each of the rectangles, leaving a 1/4-inch border around the edges.
  • Place 2 slices of the brie on top of the fig preserves.
  • Top the brie with the cranberry mixture, pressing the cranberries in slightly to adhere them.
  • Brush the edges of the puff pastry with the beaten egg. Sprinkle the edges with the coarse sugar.
  • Bake the puff pastries until the brie is melted and the puff pastry is golden-brown, about 15-20 minutes.
  • Remove the pastries from the oven and top with the thyme.
  • Serve warm!
