Ingredients
- 2 (1-pound) rib-eye steaks can substitute New York strip steak or top sirloin steak
- 1 1/2 teaspoons sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic peeled and halved
- 4 fresh thyme sprigs
Directions
- Pat the steaks dry with paper towels.
- Generously season the steaks on both sides with the salt, the black pepper, the garlic powder, and the smoked paprika.
- Preheat a 10-inch cast-iron skillet over medium-high heat.
- Add the olive oil to the hot skillet and swirl it to coat the bottom.
- Add the steaks to the hot oil and sear the steaks on one side, undisturbed, until a brown crust forms on the bottom, about 4-5 minutes.
- Using tongs, flip the steaks and sear them, undisturbed, until a brown crust forms on the bottom, about 4-5 minutes.
- Reduce the heat to medium.
- Add the butter, the garlic cloves, and the thyme sprigs beside the steaks in the pan.
