Ingredients
- 1 pound lean ground beef
- 1 medium onion diced
- 3 cloves garlic minced
- 1 red or green bell pepper diced
- 1 cup celery diced
- 2 teaspoons Cajun seasoning
- 1/2 teaspoon kosher salt
- 1 1/2 cups white rice
- 3 1/2 cups beef broth
- green onions optional, to taste, chopped, for garnish
- parsley leaves optional, to taste, for garnish
Directions
- In a Dutch oven or heavy-bottomed pan over medium heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
- Add the onions, the garlic, the bell peppers, the celery, the Cajun seasoning, and the salt to the beef and stir to combine.
- Cook the beef mixture, while stirring, until the vegetables are softened, about 5 minutes.
- Add the rice and the beef broth to the beef mixture and bring the mixture to a boil.
- Reduce the heat to low and cover the Dutch oven.
- Simmer the beef mixture, covered, until the rice is fully cooked and the liquid is absorbed, about 20-23 minutes.
- Allow the beef mixture to sit for 5-10 minutes.
- Fluff the rice mixture with a fork.
- Serve topped with the green onions and the parsley.
