Ingredients
For the herb-mayo:
- 1 cup mayonnaise
- 2 tablespoons parsley freshly chopped
- 2 teaspoons thyme freshly chopped
- 1 tablespoon extra-virgin olive oil
- 2 cloves garlic minced
For the sandwich:
- 8 slices thick bread such as country white bread or sourdough
- 1/4 cup Dijon mustard
- 12 slices deli ham
- 8 slices provolone cheese
- arugula to taste
- 1 tomato thinly sliced
- 1/2 red onion thinly sliced
Directions
- In a medium bowl, add the mayonnaise, the parsley, the thyme, the oil, and the garlic and whisk to combine.
- On 4 slices of the bread, spread 2 tablespoons of the herb-mayo on each. Reserve the remaining herb-mayo for another use.
- On the remaining slices of the bread, spread 1 tablespoon of the mustard on each.
- Top each of the herb-mayo-smeared slices of the bread with 3 slices of the ham, 2 slices of the provolone, an even amount of the arugula, 2 slices of the tomato, and an even amount of the red onions.
- Close the sandwiches with the mustard-smeared bread slices, mustard-side down.
- Serve.
