Ingredients
- 4 medium Yukon gold potatoes thinly sliced
- 8 ounces ham cooked and cubed
- 1 medium green sweet pepper chopped
- 1 small sweet yellow onion chopped
- 1 cup Colby and Monterey Jack cheese shredded and mixed
Directions
- Preheat the oven to 350 degrees F.
- Grease a 2-quart baking dish.
- Layer 1/2 of the potatoes, 1/2 of the ham, 1/2 of the green pepper, 1/2 of the onion, and 1/2 of the cheese in that order in the prepared baking dish.
- Layer on the remaining ham, the remaining sweet pepper, and the remaining onion in the baking dish.
- Top the casserole with the remaining potatoes in an even layer.
- Cover the casserole and bake for 45 minutes.
- Uncover and continue baking until the potatoes are tender, about 15 minutes.
- Sprinkle the remaining cheese on top of the casserole and bake until melted, about 5 minutes.
- Serve hot.
