Ingredients
- 2 cups multi-grain penne pasta uncooked
- 1 pound chicken breasts boneless, skinless, and cut into bite-sized pieces
- 1 1/4 cups salsa thick and chunky
- 1 cup frozen corn
- 1 large green pepper cut into strips
- 1 cup Mexican blend cheese shredded
Directions
- In a large boiling pot of salt water, cook the pasta according to the package directions. Drain.
- While the pasta is cooking, in a large nonstick skillet coated with cooking spray over medium heat, cook the chicken, while stirring, about 2 minutes.
- Stir the salsa, the corn, and the peppers into the chicken mixture and bring to a boil.
- Lower the temperature to medium-low and simmer, stirring occasionally, until the chicken's internal temperature reads 165 degrees F, about 10 minutes.
- Add the cooked pasta to the chicken mixture and lightly mix.
- Top the pasta mixture with the cheese.
- Transfer the skillet away from the heat and cover.
- Let the skillet stand until the cheese has melted, about 1 minute.
- Serve.
