Ingredients
- 3 cups all-purpose flour plus more, to taste, for dusting the pans
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon ground cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 1/4 cups white sugar
- 3 teaspoons vanilla extract
- 2 cups zucchini grated
- 1 cup walnuts chopped
Directions
- Grease two 8x4-inch pans, then using the extra flour, lightly dust the greased pans.
- Preheat the oven to 325 degrees F.
- Sift the remaining 3 cups of the flour, the salt, the baking powder, the baking soda, and the cinnamon together in a bowl.
- In a separate large bowl, beat the eggs, the oil, the vanilla, and the sugar together.
- Add the sifted dry ingredients mixture to the creamed mixture, beating well.
- Stir the zucchini and the nuts into the batter until well-combined.
- Pour the batter into the prepared pans.
- Bake until a toothpick inserted into the center of each of the loaves of bread comes out clean, about 40-60 minutes.
- Cool the loaves in the pan on a wire rack for 20 minutes.
- Remove the loaves from the pans and allow them to cool completely.
- Slice and serve.
