Ingredients

  • 1 1/2 cups Dr Pepper®
  • 1 cup vegetable or canola oil
  • 1/2 cup unsweetened cocoa
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup light brown sugar firmly packed
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon table salt
  • 1/2 cup buttermilk
  • 2 large eggs lightly beaten
  • 2 teaspoons vanilla extract
  • fudge icing to taste, homemade or store-bought
  • 1 1/2 cups pecans toasted and chopped

Directions

  • Preheat the oven to 350 degrees F.
  • Lightly grease a 17 1/2-inch x 12 1/2-inch sheet pan.
  • In a medium saucepan over medium heat, add the soda, the oil, and the cocoa and stir to combine.
  • Cook the soda mixture, while stirring often, until it comes to a boil.
  • Transfer the saucepan from the heat.
  • Allow the soda mixture to cool enough so it will not scramble the eggs.
  • In a large bowl, add the flour, the granulated sugar, the brown sugar, the baking soda, and the salt and whisk to combine.
  • Add the soda mixture to the flour mixture and whisk to combine until blended.
  • Add the buttermilk, the eggs, and the vanilla to the soda mixture, whisking to combine.
  • Pour the batter into the prepared sheet pan.
  • Bake until a wooden toothpick inserted into the center comes out clean, about 18-22 minutes.
  • Pour the fudge icing over the warm cake and spread it out evenly.
  • Sprinkle the cake with the pecans.
  • Allow the cake to cool completely in the pan, about 1 hour.
  • Slice and serve.
