Ingredients
- 4 eggs egg whites and egg yolks separated
- salt to taste
- 1/4 cup parmesan cheese finely grated
- 1 scallion finely chopped
- pepper to taste, for garnish
Directions
- Preheat the oven to 450 degrees F.
- Line a large baking sheet with parchment paper, then coat it with nonstick cooking spray.
- In a large bowl, add the egg whites and the salt and beat with an electric hand mixer until stiff peaks form.
- Use a rubber spatula to fold the parmesan cheese and the scallions into the beaten egg whites.
- Shape the egg mixture into 4 even mounds, about 3/4 cup each, then evenly place them on the prepared baking sheet.
- Use the back of a spoon to make a small well in the center of each of the egg mounds.
- Bake the egg mounds until they are lightly brown, about 3 minutes.
- Use a clean spoon to add 1 of the egg yolks into the well of each of the egg mounds.
- Bake the egg mounds, about 3-5 minutes.
- Serve the egg mounds garnished with the pepper.
