Ingredients
- 12 squares low-fat honey graham crackers finely crushed
- 1/4 cup butter melted
- 1 teaspoon sugar
- 1 (0.3-ounce) package sugar-free low-calorie lime-flavored gelatin
- 3/4 cup water boiling
- 1 1/2 cups low-fat or fat-free cottage cheese
- 1 (8-ounce) container reduced-fat cream cheese or Neufchâtel cheese softened and chopped
- 1 (8-ounce) container frozen light or fat-free whipped dessert topping thawed
- key limes or limes optional, to taste, sliced, for topping
Directions
- In a small bowl, combine the graham cracker crumbs, the butter, and the sugar.
- Press the crumb mixture into the bottom of a 2-quart square baking dish.
- Refrigerate the graham cracker crust while preparing the filling.
- In large bowl, add the lime gelatin and the boiling water and stir until the gelatin is dissolved.
- In blender or food processor, add the cottage cheese and the cream cheese, then cover and process until smooth, stopping several times to scrape down the sides.
- Whisk 1/2 cup of the cottage cheese mixture into the gelatin mixture.
- Whisk the remaining cottage cheese mixture into the gelatin mixture until smooth.
- Fold the whipped dessert topping into the gelatin mixture.
- Spoon the filling mixture over the chilled graham cracker crust.
- Cover and chill the bars until the filling is firm, at least 8 hours and up to 24 hours.
- Cut the bars into squares and top with the lime slices.
- Serve.
