We don't know about you but that sounds pretty delicious already! Easy Beefy Noodle Casserole is the perfect comfort food for cold weather, especially with the crispy cheese topping in every bite. Who says weeknight dinner has to be boring?

Ingredients

12 ounces egg noodles
2 teaspoons olive oil
1 1/4 pounds lean ground beef
1 onion finely chopped
2 teaspoons garlic minced
salt to taste
pepper to taste
1 (15-ounce) can tomato sauce
1 (15-ounce) can diced tomatoes drained
2 teaspoons Italian seasoning
2 cups cheddar cheese shredded
2 tablespoons parsley optional, chopped, for garnish

Directions

Cook the egg noodles according to package directions.
Preheat the oven to 400 degrees F.
Grease a 9x13-inch baking dish.
While the noodles are cooking, heat the olive oil in a large pan over medium-high heat.
Add the ground beef to the pan and cook for 4-5 minutes, breaking up the meat with a spatula.
Add the onions and garlic to the pan and cook, making sure to stir frequently, until the onions have softened and the beef is cooked through, about 5 minutes.
Season with the salt and the pepper.
Add the tomato sauce, the tomatoes, and the Italian seasoning to the beef mixture, stirring to combine.
Drain the noodles and add them to the pan with the beef mixture, tossing to combine.
Pour the beef mixture into the prepared casserole dish.
Top the casserole with the cheddar cheese.
Bake until the cheese is melted, about 10-15 minutes.
Sprinkle with the parsley and serve.
