Ingredients
- 1/2 (14.1-ounce 2-count) box rolled pie crusts, remaining pie crust reserve for another use
- 1/2 cup cranberry sauce store-bought or homemade
- 3 ounces brie cheese cut into 24 pieces
- 1 tablespoon fresh chives optional, chopped, for garnish
Directions
- Preheat the oven to 450 degrees F.
- Lightly coat a 24-cup mini muffin tin with cooking spray.
- Unroll the pie crust dough onto a cutting board or a clean work surface.
- Roll out the pie dough until it is about 12 inches in diameter.
- Cut 24 (2-inch) circles out of the dough with a biscuit cutter. Reroll the scraps as needed to ensure you get 24 circles.
- Place the dough circles in the prepared muffin cups, gently pressing the dough circles into the bottoms and very slightly up the sides of each cup.
- Pierce each of the dough circles with a fork.
- Bake the dough circles until they are lightly browned, about 5-7 minutes.
- Add 1 teaspoon of the cranberry sauce to each muffin cup, spreading it evenly onto the dough circles.
- Top each of the cranberry layers with 1 piece of the brie cheese.
- Bake until the cranberry sauce is hot and the cheese has slightly melted, about 5 minutes.
- Allow the brie bites to cool for 5-10 minutes.
- Evenly sprinkle the brie bites with the chives and serve warm.
