Ingredients

8 corn tortillas
1/4 cup vegetable oil
1 cup rotisserie chicken diced
1 package taco seasoning
1 (15-ounce) can black beans drained
1/2 cup salsa
1/2 cup cilantro diced, divided
1 cup tomatoes diced
2 cups lettuce shredded
1 cup queso fresco crumbled
1/2 cup sour cream optional

Directions

In a skillet, fry the corn tortillas in the vegetable oil over medium heat until they are crispy, about 1 minute per side.
Drain the tortillas on paper towels and keep them warm.
Add the diced chicken to the skillet and sprinkle with the taco seasoning and sauté until it is heated through. Move the chicken to a serving bowl and keep it warm.
Add the black beans to the skillet and mash until most of them are broken.
Add the salsa and 1/4 of the cilantro to the beans and sauté until the beans are thickened and creamy, about 5 minutes.
Spread the black bean mixture onto the fried tortillas and top with the chicken.
Top the chicken with the tomatoes, the lettuce, the remaining cilantro, the queso fresco, and the sour cream.
Serve.
