Ingredients

  • 1 tablespoon olive oil
  • 4 (4-ounce) chicken breast halves boneless and skinless
  • 1 (14.5-ounce) can no-salt-added stewed tomatoes
  • 1 cup water
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups instant brown rice
  • 1 (12-ounce) package frozen cut green beans
  • 12 pitted Greek olives halved
  • 1/2 cup feta cheese crumbled

Directions

  • In a large nonstick skillet, heat the oil.
  • Place the chicken halves in the oil and brown on both sides, about 3-4 minutes.
  • Stir in the tomatoes and their juices, the water, the oregano, and the garlic powder.
  • Bring the chicken mixture to a boil, then reduce the heat.
  • Cover the skillet and simmer for 10 minutes.
  • Stir the rice and the green beans into the chicken mixture.
  • Return the chicken mixture to a boil, then cover and simmer until an instant thermometer inserted into the chicken halves reads 165 degrees F and the rice is tender, about 8-10 minutes.
  • Stir in the olives and sprinkle with the cheese.
  • Serve.
