Ingredients
For the chicken:
- 1 cup orange juice
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons onion minced
- 1 orange zested
- 1 tablespoon sriracha
- 2 tablespoons cornstarch
- 3 cloves garlic grated
- 1 (1-inch) knob ginger grated
- 2 pounds chicken breasts or thighs boneless and skinless, cut into bite-sized pieces
Optional, for serving:
- white rice to taste, cooked and hot
- orange zest to taste
- green onions to taste, chopped
- orange slices to taste
Directions
- In a large bowl, add the orange juice, the rice vinegar, the brown sugar, the soy sauce, the onions, the zest of 1 orange, the sriracha, the cornstarch, the garlic, and the ginger and whisk to combine.
- Pour the orange juice mixture into a slow cooker.
- Add the chicken pieces to the slow cooker and stir to combine.
- Cover and cook until the chicken pieces reach an internal temperature of 165 degrees F, about 3-4 hours on high or 6-8 hours on low.
- On serving plates, evenly add the hot rice.
- Evenly add the orange chicken on top of the white rice.
- Serve garnished with the extra orange zest, the green onions, and the orange slices.
