Ingredients

For the chicken:

  • 4 chicken breast halves boneless and skinless
  • 1/2 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon paprika
  • 1/8 teaspoon black pepper
  • 1 tablespoon canola oil

For the cream sauce:

  • 1 cup heavy cream
  • 2 teaspoons garlic minced
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/3 cup sun-dried tomatoes chopped
  • 1/4 cup parmesan cheese shredded
  • 1/2 cup fresh spinach chopped
  • pasta or potatoes optional, to taste, cooked and warm, for serving
  • fresh basil optional, to taste, chopped, for garnish

Directions

  • Preheat the oven to 425 degrees F.
  • Place the chicken breasts on a cutting board and cover them with a piece of plastic wrap.
  • Using a rolling pin, a smooth meat mallet, or a small frying pan, flatten the thicker side of the chicken so that it is more of an even thickness.
  • Place the chicken breasts in a 9x13-inch baking dish.
  • Combine 1/2 teaspoon of the salt, the Italian seasoning, the paprika, and 1/8 teaspoon of the pepper.
  • Drizzle the chicken with the oil and rub it with the seasoning mixture.
  • Whisk together the heavy cream, the garlic, the cornstarch, the remaining salt, and the remaining pepper until combined.
  • Add the sun-dried tomatoes and the parmesan cheese into the sauce mixture.
  • Pour the sauce around the chicken in the baking dish.
  • Bake until the chicken reaches 165 degrees F internally in the thickest part of the meat, about 16-20 minutes.
  • Stir the spinach into the sauce.
  • Cover the pan and allow the chicken to rest until the spinach wilts, about 10 minutes.
  • Spoon the chicken and the sauce over the warm pasta.
  • Garnish with the fresh basil and serve.
