Ingredients
- 1 tablespoon cooking oil
- 7 ounces smoked sausage sliced into rounds
- 1 yellow onion diced
- 1 (10-ounce) can diced tomatoes with green chiles
- 8 ounces wide egg noodles
- 1 1/2 cups chicken broth
- 3 cups fresh spinach
- 1 cup Monterey Jack cheese shredded
- 1 green onion sliced
Directions
- In a large skillet over medium heat, add the oil and the sausage and cook until the sausage is well-browned.
- Drain any excess fat from the skillet.
- Add the onions to the skillet and sauté until they soften, about 4-5 minutes.
- Add the diced tomatoes with the green chiles and their juices, the egg noodles, and the chicken broth to the skillet and stir until everything is evenly combined.
- Cover the skillet and allow the broth to come to a boil.
- Turn the heat down to medium-low and let the pasta simmer, stirring occasionally and returning the lid each time, until tender and cooked through with only a small amount of the liquid remaining, about 10 minutes.
- Add the spinach to the skillet and gently stir it into the pasta, allowing the heat to wilt it.
- Top the pasta with the Monterey Jack cheese.
- Cover the skillet and let the pasta cook over low heat until the cheese is melted and creamy.
- Sprinkle the pasta with the green onions and serve.
