Ingredients
- 2 tablespoons olive oil
- 1/2 medium red onion diced
- 1 (14.5-ounce) can diced tomatoes
- 1/3 cup chicken stock
- 1/3 cup assorted olives pitted and halved
- 1 (6-ounce) jar artichoke hearts drained, hearts halved
- 2 cloves garlic minced
- salt to taste
- freshly ground black pepper to taste
- 8 ounces pasta of your choice, cooked
- 3 tablespoons jarred pesto
- 1/2 cup feta fork-chunked
- 3 tablespoons pine nuts toasted
Directions
- In a skillet over medium heat, add the olive oil.
- Add the red onions to the hot oil and cook, while stirring, until they become translucent, about 2-3 minutes.
- Add the tomatoes and their juices, the chicken stock, the olives, the artichoke hearts, the garlic, the salt, and the black pepper to the onions and stir to combine.
- Reduce the heat to low and simmer the sauce mixture, while stirring occasionally, until thickened, about 15 minutes.
- Add the pasta to the sauce mixture and toss to combine.
- Add the pesto to the pasta mixture and toss to combine.
- Sprinkle the feta and the pine nuts on top of the pasta mixture.
- Serve.
